Live counters do two things a plated buffet can't: they create movement and conversation around the food, and they guarantee everything is served hot and fresh.
The Most Popular Live Counters
Chaat counters (golgappa, tikki, papdi chaat) are consistently the most crowded spot at any Punjabi event. Live tandoor counters — fresh roti, naan and paneer tikka straight off the fire — are a close second. For dessert, a live jalebi or waffle counter works especially well for evening functions.
How Many Counters Do You Actually Need?
More isn't always better. For most mid-size events, 2–3 well-staffed live counters outperform 5–6 understaffed ones, where guests end up waiting in long lines.
Space and Staffing
Each live counter needs its own space, equipment and dedicated staff — it isn't just an add-on to the regular buffet team. Confirm with your caterer how many staff will be running each counter, not just how many counters are included.
