Outdoor events look wonderful in photos, but they need more upfront planning than an indoor banquet hall where power, water and shelter are already sorted.
Power and Water
Confirm with your venue whether there's existing power for cooking equipment, or whether your caterer needs to bring a generator. The same goes for a water source close enough to the cooking area.
Weather Backup
Even in a dry season, have a covered area planned for at least the cooking and serving stations. A sudden gust of wind or dust can affect an exposed buffet far more than people expect.
Distance From the Kitchen Base
If your caterer is travelling some distance to your venue, ask how they keep food fresh and hot during transport, especially for dishes cooked partially off-site.
